Fresh Spinach Said To Be Soon Safe Again

"Health officials are clearing the way for a return of some fresh spinach to store shelves, even as they confirm additional illnesses linked to a nationwide outbreak of E. coli traced to bagged salad produce grown in the Salinas Valley," according to the Sacramento Bee.

CNN reports that "although the FDA has recommended that people not eat fresh, raw spinach, it said Friday that spinach grown anywhere outside California's Salinas Valley is safe to eat. Salinas Valley farmers and growers were developing new food safety guidelines they need to have approved by the FDA before the agency lifts its consumer warning on locally grown and packaged spinach."

I'm in no hurry at all, and will rely on my immense stores of canned spinach to meet my cravings for the richly nutritious deep green leafy vegetable. A touch of extra-virgin olive oil -- I must say, there's nothing like Goya, it is simply the best, and I've tried countless others -- and a splash of balsamic vinegar, choose a good quality, well aged sort, and having to make do without the fresh spinach for a bit longer won't be so bad at all.
