For more than 8 months my Saturdays have included hosting the radio program Surviving The 21st Century. Week after week my co-hosts, the writing and research team of Mannie Barling and Ashley F. Brooks have joined me to take a long hard look at health and nutrition in our modern world. I hate to say it, but much of our findings have been depressing. There seems to be a direct coloration, a ’cause and effect’ between wellness and food. The amount of additives used by the Food Industry makes your head spin, MSG, High Fructose Corn Syrup, Soy and Sodium are just four that seem to be in just about every product sold in the local supermarket. When you add in the vast use of GM (Genetic Modified) plants and animals the picture becomes even bleaker.
But, all is not lost! Last Saturday my wife and I were invited to her family reunion. There is real food to be found, if you know where to look. I took Surviving The 21st Century on the road, to Biloxi, Mississippi. My thanks to Roy and Doris for transportation, Rob for letting me use his mobile equipment, and Norman and Debbie for letting me convert their motor-home into a studio!
Great food, great people, it was just a fabulous day! Not a GMO Craw-fish in sight! It was so much fun that I want to share some pictures with everyone. This is what I call eating well. A picture is always worth a thousand words.
Obviously the folks in the Gulf region like to do things in a grand style, size does matter!
However even with this huge pot it took three batches to cook the 8 gazzilion pounds of Craw-fish!
I did not get the entire recipe, but as far as I can tell, the basic building block is 150lbs of craw-fish.
Add a huge amount of great Cajun Sausage, onions, potatoes, and some secret seasoning, and you are good to go! Of course everything, including the serving implements need to be supersized.
Dinner for one? No plates were were needed, who needs plates when you can use trays?

Hmm. Nothing like the real deal crawfish boil. The people down in that end of the country love to share and boy is it tasty. In all of my traveling, the boil at “da Pope” in Violet, LA is one of my fondest and tastiest memories. I include a Saipan Barbeque and Mongolian Mutton boiling in a similar never to be equaled list. Oh, and a New England Clambake done by friends and family on an island. I’m thinking that I have been blessed. Blessed be those who feed their friends.
