It is important to know that there is a crucial between bound-glutamates found in natural foods and unbound-glutamates such as MSG. Bound glutamate is a natural substance the human body is equipped to process in moderation as it does with any other protein. An unbound glutamate, much like table salt, cannot be broken down by the body and affects the heart, kidneys and liver.

A natural bound glutamate is less dangerous because it is slowly broken down and absorbed by the gut. It is burned up by the tissues, especially muscles, before toxic concentrations can build up in the brain. But high levels of unbound glutamate cause free radical damage throughout the human body which many scientists opine leads to cancer. If you have a history of cancer in your family, as I do, then consuming more than 1,000 times the amount of unbound glutamates a day for long periods puts you on a direct collision course with Alzheimer’s and cancer.

Unbound glutamates are also produced in the form of hydrolyzed protein, in the wax that commercial growers put on vegetables and fruits to make them look more appealing. It is also used as a preservative in packaged foods and soft drinks. Acid-hydrolyzed vegetable protein (HVP) is produced by boiling cereals or legumes, such as genetically modified soy, corn or wheat in hydrochloric acid and then adding sodium hydroxide. Most of the ingredients are junk chemicals that cannot be eaten on their own.

MSG is another synthetic chemical that causes weight gain, obesity, food addiction, illness and disease.

MSG does not naturally occur in Mushrooms or anything else. You are confusing the Glutimate with Mono Sodium Glutimate. One occurs in many foods, the other is the result of a lab experiment conducted by some Dr Frankenstein!
