		<description>I don't understand the logical leap to "creeping bureaucracy". And when you say the 2/3 of the money goes to "overhead and the cost of bureaucratic oversight", remember that there is a real cost associated with serving food. This ratio is actually quite a bit lower than in your average restaurant. Most restaurants have a food cost of around %25 and the rest goes to overhead. So I look at that ratio and think that's a very streamlined system. 

And as for Federal mandates... I agree that not everything needs a federal mandate, but in the US, obesity is a drain on our society's health and economy, and it is caused not just by the food we buy, but by systems that subsidize cheap, low quality food in favor of healthy fresh options. It's a crime. And I'm glad that our leaders are starting to think about shifting the balance of our food systems towards a healthier distribution model.</description>
